Savory Tatsoi Salad

Whoever said tatsoi is the new spinach read our minds. This delicious salad is packed with nutrients sure to get you that lunchtime boost!
Ingredients
Ranch Yogurt Dressing:
- 3 tbsp mayo
- 1 tbsp dairy-free milk, unsweetened
- 3 tbsp dairy-free yogurt, unsweetened.
- 1 tbsp coconut aminos
- coarse sea salt and black pepper, to taste
Tatsoi Salad:
- 7 oz carrots, about 2 large
- 7 oz English cucumber
- 5 oz Copiana tatsoi
- 2 oz mizuna, or baby arugula
- 2 oz mixed greens of choice
- 1 tbsp olive oil
- Toasted sesame seeds
- Coarse sea salt to taste
Instructions
- Mix ranch yogurt dressing and toss it into your salad. Set aside in the fridge until ready to use.
